La loro concentrazione nel latte, indica pertanto uno stato dismetabolico quale la chetosi, che si manifesta nella bovina in uno stato di deficit energetico, solitamente a fine gravidanza e a inizio lattazione. Il deficit energetico si traduce in una forte mobilizzazione delle riserve lipidiche producendo una grande quantit\u00e0 di corpi chetonici, utilizzati come fonte energetica in presenza di glucosio.
