I sacrifici con i bovini bianchi (<em>bosmagnus et<\/em> <em>albus<\/em>) sono stati introdotti nella Roma antica con Numa Pompilio proveniente dalla regione Umbro-Sabina.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Caratteristiche<\/strong><\/h2>\n\n\n\n<p>Mantello bianco porcellana, con presenza di ciglia, musello, nappa della coda, unghioni, punta delle corna neri.<\/p>\n\n\n\n<p>La testa \u00e8 leggera, distinta, espressiva con profilo frontonasale rettilineo, dotata di corna corte, piuttosto sottili, dirette lateralmente e in avanti.<\/p>\n\n\n\n<p>Taglia imponente, raggiunge un\u2019altezza al garrese tra 155 e i 175 cm nei maschi e tra 142 e i 165 cm nelle femmine.<\/p>\n\n\n\n<p>Le vacche pesano tra gli 8 ed i 9 q.li mentre i tori tra i 12 e i 15 q.li. E\u2019 una razza precoce che raggiunge il peso ideale a 15-16 mesi con rese fino al 67%.<\/p>\n\n\n\n<p>Il sistema di allevamento spazia dalla stabulazione libera all\u2019intensivo.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Attitudine e prodotti<\/strong><\/h2>\n\n\n\n<p>Spiccata attitudine alla produzione di carne; la capacit\u00e0 di accrescimento \u00e8 notevole e pu\u00f2 raggiungere, nei migliori soggetti, punte di 2 kg al giorno.<\/p>\n\n\n\n<p>Il prodotto tipico \u00e8 la \u201cBistecca Fiorentina\u201d il cui nome deriva dalle celebrazioni a Firenze della festa di S.Lorenzo all\u2019epoca della famiglia dei Medici.<\/p>\n\n\n\n<p>In alcune zone, la carne \u00e8 oggetto di certificazione IGP Vitellone Bianco dell\u2019Appennino Centrale.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft size-full\"><img decoding=\"async\" loading=\"lazy\" width=\"164\" height=\"221\" src=\"https:\/\/www.leo-italy.eu\/wp-content\/uploads\/2021\/11\/image-34.png\" alt=\"\" class=\"wp-image-702\"\/><\/figure><\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Origins<\/strong><\/h2>\n\n\n\n<p>Breed of Umbrian-Etruscan origin, it has been bred for over twenty-two centuries in Umbria, Tuscany and Lazio. Sacrifices with white cattle (bos magnus et albus) were introduced in ancient Rome by Numa Pompilio born in the Umbrian-Sabinan region.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Peculiarities<\/strong><\/h2>\n\n\n\n<p>Population: about 45000 heads in 1500 farms.<\/p>\n\n\n\n<p>Animals with white porcelain coat, and black eyelashes, musk, tail tassel, hoofs and horns. Head is light and expressive with a straight frontonasal profile.<br>Size is huge (withers height 155-175 cm in males and 142-165 cm in females; live weight 1.200-1.500 kg in males, 800-900 kg in females). The slaughter yields can reach of up to 67%. The breeding system ranges from free housing to intensive.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Production<\/strong><\/h2>\n\n\n\n<p>Meat production (average daily gain up to 2 kg per day).<br>The typical product is the &#8220;Bistecca Fiorentina &#8220;.
