Origini

Denominata nel XIX secolo “Modenese di pianura” o “Carpigiana”, essendo Carpi il suo principale centro di allevamento, venne denominata “Modenese” nel 1880. La razza si è originata in tempi remoti da incroci; verso la fine del ‘800 gli allevatori optarono per la selezione del mantello bianco.

Caratteristiche

Di taglia media ha mantello bianco latteo nelle femmine, bianco con gradazioni grigie al collo, spalle, avambraccio o  coscia nei tori; testa leggera con profilo rettilineo o leggermente concavo, corna piuttosto corte specialmente nei tori.

La mammella è ampia e globosa, estesa sotto il ventre e all’indietro.

Viene allevata sia stabulata che allo stato semibrado, in montagna come in pianura.

Attitudine e prodotti

E’ una razza a duplice attitudine; in particolare il latte viene impiegato per le produzioni del Parmigiano Reggiano “di Bianca” mentre le carni sono di ottima qualità, sapide e ben marezzate di grasso.

Origins

Named in the XIX century as “Modenese di pianura” or “Carpigiana”, being Carpi its main breeding center, the breed was called “Modenese” in 1880. The breed originated in ancient times from crossings of other breeds; towards the end of ‘800 the breeders selected the white coat.

Peculiarities

Medium size, it has a milky white coat in females, white with gray shades at the neck, shoulders, forearm or thigh in the bulls; light head with straight or slightly concave profile, rather short horns especially in bulls. Broad and globe shaped udder, extended toward the belly and backwards.

It is bred both stable and in semi-free range, in the mountains as well as in the plains.

Attitudes

It is a dual-purpose breed; in particular the milk is used for the production of Parmigiano Reggiano “di Bianca” while the meat is of excellent quality, savory and well marbled with fat.
